Food, of course, is part of the physical world that impacts us daily. Making the right choices for our constitutions and taste buds, consistently and mindfully, is part of this self-care. Clean eating might sound restrictive and less than exciting, but really, just the opposite is true. It can, and should be, delicious.
Just in time for warm weather (well, it’s getting cool again at the end of the week, but it is April after all), this freshly pressed juice is full of sweet-tart flavor and nutrients.
Organic kale, organic Granny Smith apples, ginger, and lemon juice come together to provide vitamins A, C, and K, folate, lutein, chlorophyll, and zeaxanthin.
Making this refreshing and nourishing beverage doesn’t really require a recipe. Vary the amounts of each ingredient to create the blend you like most. More apples will make it sweeter. More kale will make it more bitter. Fresh ginger is quite hot, so use it in moderation, unless you want a very spicy juice. Lemon juice adds brightness and tartness. You don’t need much to do the trick.
To make about a quart of juice, here’s what I did:
Using a juicer, such as Breville, juice about three large (or 5 small to medium) Granny Smith apples, one large bunch of curly kale, one 2-inch piece of fresh ginger, and one lemon (peel removed). Strain into a pitcher and chill well.
This juice will stay fresh for about 24 hours in the refrigerator.
